Sweet Potato & Sausage Stuffing

Ingredients

  • 1 pound sausage meat

  • 2 minced onions

  • 1/2 tsp poultry seasoning

  • 1 tsp salt

  • 1 tsp pepper

  • 1 cup chopped celery

  • 4-5 cups soft dry bread crumbs

  • 2 quarts hot riced sweet potatoes

directions

  1. Cook sausage meat until lightly browned, breaking into small pieces as it cooks.

  2. Remove meat from pan, leaving fat.

  3. Cook onions, seasoning & celery in fat.

  4. Combine crumbs, potatoes and sausage meat; mix throughly.

Celery & Walnut Stuffing

Ingredients

  • 1/2 cup butter

  • 1/2 tsp thyme

  • 2 onions, minced

  • 2 tsp sage

  • 2 tsp salt

  • 1/2 tsp pepper

  • 2 quarts soft dry bread crumbs

  • 2 cups chopped celery

  • 2 tbsp chopped celery leaves

  • 2 cups walnut meats

directions

  1. Cook onions and other seasonings in butter for 2-3 minutes.

  2. Add bread crumbs, celery, leaves and broken but meats; mix thoroughly .

Pecan Stuffing

Ingredients

  • 1/2 cup butter

  • 2 onions, minced

  • 1 cup diced celery & leaves

  • 2 tsp thyme

  • 2 tsp marjoram or sage

  • 2/3 tsp pepper

  • 2 tsps salt

  • 1 tsp celery seeds

  • 1/2 tsp nutmeg

  • 2-4 quarts soft dry bread crumbs

  • 1 cup pecan meats

directions

  1. Cook onions, celery and other seasonings in butter for 2-3 minutes.

  2. Add bread crumbs and chopped nuts; mix thoroughly .

  • 2 tsp thyme

Ingredients

  • 2/4 cup butter or margarine

  • 2 onions, minced

  • 2 tbsp minced parsley

  • 1 1/2 tsp salt

  • 1/2 tsp pepper

  • 2 tsp sage

  • 3 quarts diced bread crumbs

  • 1 cup chopped celery

  • 2 dozen chopped oysters

directions

  1. Cook onions and other seasoning in butter for 2-3 minutes.

  2. Combine ingredients ; mix thoroughly.

Chestnut Stuffing

Ingredients

  • 2 pounds chestnuts

  • 2 minced onions

  • 3/4 cup butter or margarine

  • 2 tbs chopped parsley

  • 2 tsp sage

  • 2 tsp salt

  • 2/3 tsp pepper

  • 1/8 tsp nutmeg

  • 2 to 3 quarts soft dry bread crumbs

directions

  1. Cover chestnuts with boiling water; cook for 12-15 minutes.

  2. Drain chestnuts; shells and inner brown.

  3. Slice chestnuts or break them into small pieces.

  4. Cook onions and seasonings in butter for 2-3 minutes.

  5. Add bread crumbs and chestnuts; mix thoroughly.
